Old ginger (老姜) or mother ginger, is a commonly used ingredient for confinement food dishes, almost dry and spicier than young ginger. Ginger is known for its antioxidants, anti-inflammatory properties and is often used for medicinal purposes. Old ginger is thick in flesh and helps to promote sweating, dissipate cold, warms spleen and stomach. When cooking food for confinement, it is best not to remove the skin as it is rich in dietary fibre which helps to prevent swelling and constipation.
